I have no idea what these are like because I haven't yet made them. Our friend who is diabetic would like me to make these for him so I'll give it a whirl over the weekend (maybe!). I don't do all the low carb nonsense so this recipe sounds completely weird to me. I can't imagine life without bread, potatoes, etc., and I have no plans to give up those foods as they are amongst my favorites. What the hell would life be like without potatoes??!! Can you imagine trying to convince men that mashed up cauliflower is "the same thing" as mashed potatoes? Yeah, right. You don't live in MY house, that's for damn sure!

Do you make your own cream cheese? Seems it is mostly eggs and will have an eggy taste.. Let me know how it turns out.

I make cream cheese by just clabbering raw milk and then letting it get really thick on its own, then I strain it through a cheesecloth (doubled) and save the whey. What's left in the cheesecloth is a hunk of cream cheese. It's really simple.

I thought they sounded kind of "eggy" too, but I'd have to make them first to know for sure. Whenever I make homemade cream puffs, my recipe for the puff pastry part calls for 4 eggs and they really don't taste eggy at all, but then again we usually have either homemade vanilla pudding to put inside of them, or else I make a big batch of whipped cream and we separate it into different bowls and flavor the whipped cream with things like Grand Marnier, molasses, flavoring oils from the health food store (like the kind you can buy from Frontier Co-op online). My Dh's favorite oil is almond, but I like strawberry.

If I make them I'll let you know how they turn out and whether or not I made any changes to the recipe or whatever.
