My "egg lady" gave me her version of how to make perfect hard-boiled eggs so that when you peel them for deviled eggs, the whites don't look like someone's pock-marked face!!

Here's what she told me to do:

Bring eggs to room temp. Bring water to a full boil and put in eggs one at a time with a slotted spoon. When you get the last egg into the water (which will have stopped boiling for a time), set a timer for 13 minutes. Let the water return to a boil and keep it on a fairly high boil for the entire time until the 13 minutes is up. Get an ice bath ready (I just used a big bowl, set it in my sink and ran cold water into it and added ice). Take eggs out of boiling water with slotted spoon and place directly into the ice bath for 5-10 minutes. Take out one at a time and peel.

It worked pretty well, I only ruined one egg white because I had to bonk the egg onto the counter really hard to crack the eggshell and it also cracked the white. But I used it to "taste test" my filling. :D 8-)

If anyone wants my deviled egg filling recipe, let me know.
