This will be a new category for diabetic or any type of low-carb food ideas & recipes. We have a friend who was recently diagnosed with type 2 diabetes and I'm trying to help him get his kitchen organized. He doesn't spend much time there, so I'll probably end up doing some of this for him. He LOVES bread, so that is going to be very hard for him to give up.

Here's a good link with 15 "bread" recipes. I would not use boxed milks - ewww - and I also, personally, avoid flax in any form. It's estrogenic and can cause people a lot of trouble but until it's "announced", it won't register with people. You can substitute lots of different things for the flax, even walnuts and stuff would be a good choice, IMPHO.

Here's a good explanation of the Atkins Diet (and why I found it hard to follow!). Lookit all the eggs for land's sake. I love eggs, but I want something else for breakfast not just eggs every day. http://authoritynutrition.com/atkins-diet-101/ THIS is why people get bored - because there is such a lack of variety. The people who write these articles can say what they want, but eating this way is borrrrrrriiiinnnnngggg beyond belief. They're gonna need to come up with some more ideas, IMPHHO.

Here's a pretty decent link with LOTS of recipes. I would use these and build my own meals off of them, I think, you know, changing out spices and stuff. I detest curry and cilantro, so those two would definitely need changing if I were using this WOE.

I have found that the gluten free breads, cookies and such taste awful to me. I'll try the low carb bun and see how it tastes. Of course I'll cook it in the toaster oven, never a microwave. ewww
